This recipe happened on a random whim….my hubby and I were making mini meatballs for our Super Bowl lasagna cups and we had some leftover meat and ta-da…the meatball burger was formed! I decided that they must be made again and this time I stepped it up a notch by making it a pizza meatball burger…because really, how can you go wrong with adding tomato sauce and fresh mozzarella?
These meatball burgers were just awesome and pretty easy to make. The best part is you can make the burger the day ahead/the night before and then just quick throw it on the stove top or grill. Let me know what you think!
Pizza Meatball Recipe
Ingredients:
2lbs ground beef
2 large eggs, beaten
¼ cup bread crumbs
3 tablespoons chopped flat-leaf parsley
2 tablespoons chopped fresh basil
1 tablespoon salt
1 teaspoon finely chopped garlic
½ teaspoon freshly ground black pepper
4 slices firm white bread, crusts removed
1 cup milk
1 cup parmesan cheese

Directions:
1. In a large mixing bowl, use your hands or a wooden spoon to mix together the beef
and eggs. Add the bread crumbs,parsley, basil, salt, garlic and pepper and mix it well.

2. Tear the bread into pieces and transfer it to a mixing bowl. Add the milk and let it sit for 5
to 7 minutes or until the milk is nearly absorbed. Add the bread to the meat and use your hands or a wooden spoon to mix it well. Stir in the grated cheese.

3. Cover the bowl with plastic wrap and refrigerate it for a minimum of 45 minutes or overnight.
4. Take meat out and form into desired burger shape and size.
5. Heat a teaspoon of olive oil on a skillet or sauté pan. Add the meatball burgers and cook until they are brown on each side/your desired wellness.
6. Put the burger on your bun, add a little bit of pizza sauce and top with fresh
mozzarella and dried parsley (or chopped fresh parsley).

Yield:
Makes approximately 7 to 8 burgers.
