I LOVE summer. For the last 5 years it was pretty much solely because I had summers off as a teacher. But now as a stay-at-home mom that is no longer the case. Summer brings out a whole new slew of reasons to love the season (but mostly it means just being able to get out of the house…fellow mommies I am sure you know what I mean. Snow shovel and winter jackets…I’m not missing you!).
One of the things I love about summer is all the fresh produce to try with Emma. One of her new favorites is watermelon. In fact, Emma was the inspiration for this post. Not that she had any of the salad, but watching her enjoy it jogged my memory of this old-y but good-y recipe of mine that I wanted to share. In fact, before I had ever made panzanella salad this was Lawrence’s (my hubby’s) favorite. It is also super easy and quick to make. I hope you enjoy it as much as we do!
Watermelon and Feta Salad Recipe
Ingredients:
6 cups of watermelon
1/3 cup of feta cheese
balsamic – to lightly drizzle over salad
basil leaves – approximately 10 to 12
Directions:
1. Cut watermelon into cube size pieces and put in a bowl.
2. Sprinkle feta cheese on top of watermelon.
3. Drizzle balsamic over watermelon and feta (be sure to wait to add balsamic right before serving).
4. Garnish with basil leaves. I like to cut mine using these scissors.
5. Enjoy!
Serves 4 to 6 people.
