I can’t believe September is 2.5 weeks away!! Back when I was teaching I would be taking this time to cram every last glorious ounce of summer in…sleeping late, watching episodes upon episodes of some terribly “good” tv show on Netflix and basically doing whatever I felt so inclined to do that day. While those days are long gone now, I can still celebrate these last few of weeks of summer mommy-style with some summery produce in the form of watermelon mojitos!!
This is also the final drink of my watermelon series (at least for now!)…it is light and refreshing….the perfect tribute for the last few weeks of summer. You know you want some!
Watermelon Mojito Recipe
Ingredients:
To make the simple syrup:
1 cup of watermelon
1 cup of water
1 cup of granulated sugar
For each mojito:
10 – 15 leaves of mint
2 oz of light rum
1 oz of the watermelon simple syrup
1 oz fresh lime juice
A splash or two of plain seltzer
Directions:
To make the simple syrup:
Put the granulated sugar, water and watermelon in a saucepan over medium heat until the sugar crystals dissolve into the water. Remove mixture from stove and cool.
To make the mojito:
1. In the bottom of each class, muddle the mint leaves with the lime juice and simple syrup. 2. Add the rum.
3. Top with ice and seltzer.
4. Stir.
5. Garnish with mint sprig and enjoy! Cheers!
