This Sunday is the Super Bowl!!! woo-hoo!!
I always look forward to game day as I love planning the menu because let’s be serious…to me the Super Bowl is all about the food and the drinks with friends and oh yea the half time show:).
This years menu includes a mix of some oldies but goodies and a new twist to an older recipe of mine….
If you flash back two Super Bowls ago I made these lasagna cups and have been thinking about them ever since. And then if you flashback another year….
The hubby and I lived in the city and use to order taco “salads” from this one Mexican place and let me tell you, they were delicious…huge crispy fried bowls of dough. And I loved every bite of them…especially when I was pregnant with the Emster.
So this year I decided why not make mini taco cups?! And I am glad I did. I used beef but you could easily swap it out for chicken or pork or even refried beans. YUM!
To make them is really simple. I preheat the oven to 350 degrees. Then I spray two muffin tins with PAM and add a wonton wrapper to each muffin cavity.
Then I set them aside and cook the beef using McCormick’s Mild Taco Seasoning mix and set it aside.
Once the oven is preheated I cook one set of 12 wonton wrappers for 8 minutes.
Next, I put about a spoonful or so of beef into each muffin cavity and top with a sprinkling of Mexican cheese (I sprinkle all of them with cheese but wanted to show you how much beef is in each cup). Then I stick this into the oven for an additional three minutes. Repeat with second set of muffin tins.
Then comes the fun part…the toppings!! While everything is cooking in the oven I will have cut up the tomatoes, scallions and lettuce. So when everything is done in the oven I can sprinkle them on the top of the taco cups and then drizzle them with a little sour cream and some extra cheese!!
YUM!! I can’t wait to make these again on Sunday!!

Dessert: Brownie Sundaes with my favorite brownie recipe in the shape of little footballs and some homemade whipped cream!!
I also have some of my Super Bowl favorites listed under “Recipes” then “Holidays” (and yes I know the Super Bowl is not really a holiday but wasn’t sure where else to put it!).
- 1 lb of ground beef
- 24 wonton wrappers
- PAM spray
- taco seasoning (I use McCormick's Mild Taco Seasoning Mix)
- ice berg lettuce
- 1 tomato
- 3 scallions
- shredded mexican cheese
- sour cream
- guacamole and salsa for dipping (optional)
- 1. Preheat oven to 350 degrees.
- 2. Spray two muffin tins with PAM. Then place a wonton wrapper in each muffin cavity. Set aside.
- 3. Cook the beef according to the package's directions on the seasoning mix (or if not using a mix until browned and cooked through). Set aside.
- 4. Then cook one set of the wonton wrappers for 8 minutes in the oven.
- 5. Next add a spoonful or so of the cooked beef to each muffin cavity and sprinkle with Mexican cheese.
- 6. Cook for 3 minutes.
- 7. While the wonton wrappers and the wonton wrappers with beef are cooking cut tomatoes, scallions and shred lettuce.
- 8. Once the beef filled taco cups are out of the oven load on the toppings...lettuce, scallions, tomatoes and then drizzle the sour cream and add some extra cheese!! I like to take a little plastic baggie and cut a small hole in one of the corners and add the sour cream and then drizzle over the taco cups.
