July 4th is always the official start of summer for me. Back in my teaching days school would end at the tail end of June and then I would have a few days to recover and unwind from the school year before July 4th weekend rolled around. It also gave me a few days to think about what I would be making over the long holiday weekend:).
While I am not teaching right now I still feel the same way…and I can’t believe it is only a few days away! And what better excuse than to make a cute star spangled dessert?
Since I am on a little bit of a rice krispie kick right now I decided to take my new favorite recipe and jazz it up a bit with some sprinkles, a star cookie cutter and some drizzled chocolate.
Please note that I decided to use bright white candy melts instead of pure white chocolate as it is easier to melt and work with; but if you don’t have candy melts white chocolate is fine…just make sure to chop up the white chocolate extra fine before you add it to your double boiler and then stir it until it melts!
Since I used cookie cutters, I cut the leftovers into little squares of rice krispie treats to save for later as a special treat:). I was thinking some rice krispie pops (kinda like cake pops) would be fun to make. Or if you didn’t want to make them into stars, just cut the treats into bars and drizzle with chocolate and sprinkles!
All in all, this dessert is super simple to make (and super cute if I do say so myself)…perfect for your July 4th barbecue or just a tasty summer treat.
- 5 TBS salted butter
- 10 cups of mini marshmallows
- 6 cups of Rice Krispie Cereal
- 1/2 tsp salt
- star cookie cutter
- 6 oz of white candy melts
- red and blue sprinkles
- 1. Line a 9x13 pan with foil and spray with cooking spray.
- 2. In a large pot over medium low heat melt butter.
- 3. Once butter is melted, add in 8 cups of marshmallows (keep 2 cups aside for later). Stir marshmallows in the butter until just melted. Remove from heat.
- 4. Stir in cereal and salt, until the cereal is evenly coated in the marshmallow mixture.
- 5. Now stir in the remaining 2 cups of mini marshmallows.
- 6. Pour the mixture into the pan and press evenly (I used wax paper sprayed with PAM). Let your treats sit an hour or so before you start cutting them out to let them set.
- 7. Now, spray your star cookie cutter with PAM.
- 8. Cut your stars out of the rice krispie treats and set on a clean sheet of wax paper. Cover with aluminum foil and set aside.
- 9. Now melt candy melts in a bowl over a pot of bowling water (or use your double boiler if you have one). Stir until fully melted.
- 10. Snip off a corner of a plastic baggie with a pair of scissors. Pour melted chocolate into plastic bag and drizzle over cut rice krispie treats.
- 11. Add sprinkles to your star treats and then you are done!
- *I would wait an hour or so to serve to make sure chocolate/candy melts harden.
- *Make sure to cover your rice krispie treats in the meantime before serving so they stay fresh!
- *I used a star cookie cutter that was 4 1/2 inches across and this recipe yielded 6 stars. If you would like to have a higher yield of star treats use a smaller cookie cutter; however do not go too small or it will be hard to press them out of the baking pan.
