My Emma LOVES bananas…we’re talking AT LEAST 1 banana a day… so I thought these muffins would be perfect for her. She LOVED them. So did my husband. They are incredibly moist and yummy. I, myself, am normally not a banana-flavor kinda gal but THESE… I enjoyed.
As you might have noticed, I am somewhat obsessed with making mini muffins these days as they are the perfect size for toddlers. They are also a nice bite size treat for company or for me:).
Mini Buttermilk Banana Muffins

Ingredients
- 1/2 cup butter, softened
- 1 cup sugar ( 7 5/8 oz )
- 2 eggs
- 1 cup mashed bananas (approximately 3 medium-sized bananas)
- 4 tablespoons buttermilk
- 1/2 teaspoon vanilla
- 1 3/4 cups flour (7 3/4 oz flour)
- 1 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- 1. Preheat oven to 350 degrees.
- 2. Grease muffin tins and set aside.
- 3. Cream butter and sugar together in bowl or in stand mixer.
- 4. Add the eggs, bananas, buttermilk and vanilla until the batter is well mixed.
- 5. Add the flour, baking powder, baking soda and salt. Mix until well combined.
- 6. Pour batter into muffin tins and bake for 10 to 12 minutes or until a toothpick comes out clean.
