Brownies Cockaigne

As you may or may not know, I have been on a mission to find the best brownie recipe.  Well, I believe my search has officially ended now that I found these babies.  They are awesome.  Chewy and soft and delicious….in fact, they are even soft and chewy and delicious when frozen in the freezer!  How crazy is that?!  They are also made in one pot…so easy to make and easy to clean up.  Doesn’t get much better than that.

I made these brownies for the Super Bowl and used football cookie cutters to have a themed dessert.  But, you could just as easily make them into regular brownie bars or use a heart-shaped cookie cutter for aValentines Day themed treat (or really any cookie cutter that your heart desires).

This recipe called for a 9×13 pan which I used…as a result it was a relatively thin brownie, perfect for cutting out shapes with a cookie cutter.  If you prefer a thicker brownie bar, I would recommend using an 8×8 pan, which I plan on trying next…just be careful to watch the baking time in the oven as it may change slightly with a different size pan.

Brownies Cockaigne Recipe

Ingredients
  1. 4 oz of unsweetened chocolate, coarsely chopped
  2. 8 tablespoons (1 stick) of unsalted butter
  3. 2 cups of sugar ( 15 5/8 oz )
  4. 2 teaspoons vanilla
  5. 4 large eggs
  6. 1 cup of all-purpose flour (4 7/8 oz)
Instructions
  1. 1. Preheat oven to 350 degrees.
  2. 2. Line a 13x9-inch baking pan with greased aluminum foil, allowing the foil to overhang the 2 narrow ends of the pan by about 2 inches.
  3. 3. In a large saucepan over very low heat, melt chocolate and butter. Stirring instantly until the mixture is smooth.
  4. 4. Set aside the mixture to cool. Then stir in sugar and vanilla. Stir until well combined.
  5. 5. Next, add 4 eggs... one at a time, stirring until well combined.
  6. 6. Last, stir in flour until just combined.
  7. 7. Scrape the batter into the pan and spread to the edges.
  8. 8. Bake for approximately 20 minutes.
  9. 9. Allow brownies to cool in the pan on a baking rack.
  10. 10. Once cool, lift the brownies out of the pan carefully, using the aluminum foil as handles.
  11. 11. Peel off aluminum foil and cut into bars or use cookie cutters to make shapes with the brownies.
  12. 12. Enjoy!

    Because these brownies freeze so well, I think you could do a great version of Ben & Jerry's Half Baked when combined with your egg free cookie dough…
