Happy Love Day!! I absolutely LOVE Valentines Day..besides Christmas and maybe Thanksgiving it is one of my favorite holidays. I just love all the cute little hearts and pretty heart-themed desserts. (Granted, as a teenager and in my pre-married days I despised it), but as a teacher and now as a Mom, it is such a fun holiday to celebrate with kids…
The other day Emma and I watched Daniel the Tiger on PBS and it was a Valentines Day themed show…on the show they asked, “How do you show your love?” Well, I show my love through baking and always try to have baked good for my Valentines. This year I decided to make this brownie cake…it is a spin-off on the brownie recipe that I made for the Super Bowl and well, it is delicious AND simple.
If you are scrambling for a last minute dessert to baked for your loved ones I highly recommend making this brownie cake…you could even leave out the drizzled white chocolate to make it even easier!
- 4 oz of unsweetened chocolate, coarsely chopped
- 8 tablespoons (1 stick) of unsalted butter
- 2 cups of sugar
- 2 teaspoons vanilla
- 4 large eggs
- 1 cup of all-purpose flour
- 1/2 cup of white chocolate chips-chopped
- 1. Preheat oven to 350 degrees.
- 2. Line a 9 inch cake pan with greased aluminum foil, allowing the foil to overhang the pan.
- 3. In a large saucepan over very low heat, melt unsweetened chocolate and butter. Stirring instantly until the mixture is smooth.
- 4. Set aside the mixture to cool. Then stir in sugar and vanilla. Stir until well combined.
- 5. Next, add 4 eggs... one at a time, stirring until well combined.
- 6. Last, stir in flour until just combined.
- 7. Scrape the batter into the pan and spread to the edges.
- 8. Bake for approximately 25 to 30 minutes.
- 9. Allow brownie cake to cool in the pan on a baking rack.
- 10. Once cool, lift the brownie cake out of the pan carefully, using the aluminum foil as handles.
- 11. Simmer water in a pot over the stove.
- 12. While the water is heating up, chop up the white chocolate chips and place into a heat proof bowl.
- 13. Place the bowl over the pot of simmering water.
- 14. Stir until the white chocolate has melted.
- 15. Then, take a large ziplock baggie and snip a hole in one corner. Pour melted white chocolate in. Careful, the chocolate is a little warm!
- 16. Drizzle white chocolate in a zig-zag motion over the brownie cake.
- 17. Decorate cake with sprinkles.
- 18. Enjoy!
