My love for bellini’s dates back 10 years…champagne…fruit juice…something that is perfectly acceptable to drink at 10am?! Yes please!
While my bellini’s usually involve mango or peach juice this watermelon simple syrup is a great summer twist on the traditional bellini. They are like watermelon jolly ranchers in drink form..definitely my new favorite drink.
If you are more of a sangria person than a bellini gal (or boy) ….just throw in some cubed watermelon for good measure.

Watermelon Simple Syrup Recipe
Ingredients:
1 cup of seedless watermelon cubed (or cut into cute little shapes with mini cookie cutters)
1 cup of granulated sugar
1 cup of water
Directions:
1. Put watermelon, sugar and water in a saucepan over medium heat.
2. Stir together until the sugar is dissolved in the water.
3. Remove from heat. Once cooled, pour into covered container and refrigerate until ready to use.
It is the perfect cocktail for a summer get-together…whether it be a brunch, bridal shower or just an afternoon drink on a hot day. It is very cool, refreshing and sweet!
Ingredients:
Bottle of chilled prosecco
1 batch of chilled watermelon simple syrup
Directions:
Strain simple syrup – put watermelon aside. Pour 2 ounces of simple syrup liquid into each champagne jar. Top off with 2.5 ounces of champagne (which comfortably fills champagne glass).
OR make a large batch by combing the bottle of prosecco and the batch of simple syrup into a pitcher. Chill. This can be made several hours in advance. If you would like to turn the bellini into a sangria just throw in some cut up watermelon!

Note: This is a sweet drink, if you prefer a less sweet drink and are making individual servings, try 1 – 2 oz of simple syrup instead of the full 2 ounces for each glass.
