My brother-in-law and his wife were telling me over the weekend about a peach caprese salad they had made recently; needless to say, the first thing I did this morning was try it. And I’m glad I did…it was amazing.
Definitely a new favorite and a perfect summer twist to the traditional tomato caprese salad. It is perfect for lunch on it’s own or for dinner with some grilled chicken or shrimp. Heck, it is even yummy at breakfast time!
Peach Caprese Salad
Ingredients:
fresh mozzarella
2 peaches
balsamic
fresh basil to garnish – optional
sea salt – optional
Directions:
1. Slice fresh mozzarella and peaches. Arrange slices on plate, alternating the peach and mozzarella.
2. Cut up fresh basil. Place to the side.
3. Drizzle salad with balsamic.
4. Top with sea salt and fresh basil if desired.
5. Enjoy!
Serves: 2 – 3 people
