One of the favorite things I ate on vacation was a white bean and red pepper hummus dip. The minute I tried it I knew I would be recreating it; it was just that good. And recreate it I did.
It is so simple to make, easy enough for a healthy weekday snack and yummy enough to add to an appetizer spread for company on the weekend; with either veggies and/or pita.
Lucky enough for me, it is also South Beach diet (and hubby) approved. But, it is so tasty that
I will definitely be making this when I am off the diet as well; whether with veggies as I am doing now, with pita or a spread on a wrap.

Roasted Red Pepper and White Bean Hummus Recipe
Ingredients:
½ cup roasted sweet red peppers
One 15 oz can of cannellini beans
1/8 cup of lemon juice
¼ cup of tahini sauce
½ clove of garlic minced
2 tablespoons of olive oil
½ teaspoon of ground cumin
pinch of cayenne pepper
½ tsp to 1 tsp of salt, depending on your taste preference
Directions:

3. Open the can of white beans, making sure to drain them and rinse them first with fresh water in a colander.
