So while I am not a huge football fan, I do love a good tailgate and all that comes with it…yummy food and drinks! So needless to say every time Super Bowl rolls around I am always cooking up a storm.
The other day I was brainstorming and trying to come up with the perfect dip for our Super Bowl Bash on Sunday. And then it came to me… bacon and cheddar cheese. That is what needs to be in my dip this year. Because, really, does it get any better than that? And I realized, that no, it doesn’t.
A huge plus to this tasty dip is that it is very easy and quick to make. So to go with the
dip I made pretzel bites. But, packaged pretzels or pretzel flats would work too. If you want to go a little healthier than pretzels; celery, carrots, peppers, you name it… also pair perfectly. Plus, if you are like me, the veggies might make you feel less guilty when you are also having that beer (or two) while
watching the big game.

You can make this dip the day ahead and reheat in the oven before the game. I really felt
that when I did this the flavor of the bacon and scallions were more enhanced the following day (yum!), but just keep in mind that it does change the consistency of the dip slightly and it becomes more like a spread; it would be fabulous on bagel bites or bagel crisps. I also felt that it tasted fabulous on celery and other veggie sticks but my husband felt like we should just pair it with bagel crisps for our party, so it just depend on you and what you want to serve it with.

Bacon and Cheddar Dip
Ingredients:
8 slices chopped of center cut bacon
8 ounces of softened cream cheese
½ cup of mayonnaise
2 teaspoons Dijon style mustard
1 ½ cups of shredded Cheddar & Pepper Jack Cheese
3 scallions chopped
Pretzel bites, celery sticks, carrots, etc
Directions:
1. Preheat oven to 400 F.
2. Cook bacon in a nonstick skillet and drain on paper towels. Once cooked, chop bacon in small

and cooked bacon. Transfer to a hallow casserole or baking dish and bake until golden and bubbly at the edges, approximately 15 to 18 minutes.
